Very juicy and creamy
INGREDIENTS FOR 2 PEOPLE
− Wash all of the vegetables and then cut them into strips. Layer them in a tray with slices of Montesinos melting cheese in between.
− Cover the lasagne with white sauce (this can be bought). Sprinkle the grated cheese over the top.
− Place in a preheated oven for 25-45 minutes (depending on how well done you like your vegetables).
− Finish off with a couple of minutes under the grill to brown the cheese on top.
This recipe can also be made with grilled vegetables which will decrease the baking time: just enough to melt the cheese slices and brown it a little.
