Acid paste cheese
Cheese made with pasteurized goat’s milk. Awarded First Prize for four consecutive years at the Salon of the Gourmets fair in Madrid, along with three Cincho Awards, and the award for best cheese of Spain from the Ministry of Agriculture in 2011. With a creamy texture, it has a slightly acidic taste and citrusy aroma, with an edible white mold that covers the cheese during the maturation process. It’s an elegant and flavorful selection for any occasion.
RECOMMENDATION
For a smooth and precise cut, use a fine wire lyre.
INGREDIENTS: Pasteurized goat’s milk, salt, firming agent (calcium chloride), rennet and cheese cultures.
