Matured goat roll

Acid paste cheese

200 g cane made with pasteurized goat’s milk and wrapped in special paper. Awarded for four consecutive years with the first prize of the International Salon of the Club Gourmets of Madrid, three Cincho prizes and best cheese of Spain according to the Ministry of Agriculture in 2011. It has a slightly acid taste and lemon aroma, covered with selected white mold and edible that grows during the refining process.

RECOMMENDATION

For a smooth and precise cut, use a fine wire lyre.


INGREDIENTS: Pasteurized goat’s milk, salt, firming agent (calcium chloride), rennet and cheese cultures.
