Cream of pumpkin soup with fresh Montesinos goat cheese

A light, simple and very healthy dish


INGREDIENTS FOR 2 PEOPLE

  • 1 slice of pumpkin, 400 g 
  • 1 potato, 200 g 
  • 2 carrots 
  • 1 leek 
  • 200 g Montesinos fresh goat cheese 
  • 2 tablespoons of olive oil 
  • salt 
  • a sprig of parsley 
  • a few chives

 

− Bring one litre of water to the boil.

− Chop the pumpkin, potato, carrot and leek and put them into the boiling water, adding two tablespoons of olive oil and a little salt.

− Cover and leave to cook on a medium heat for 25 minutes.

− Blend until you have a smooth texture.

− Cut a piece of Montesinos fresh goat cheese and sear it on the grill. Place it in the bowl and then add the soup; decorate with parsley and chives.

Montesinos fresh goat cheese is rich in proteins and calcium, which are very beneficial for healthy bones and teeth, as well as the proper functioning of the muscles. Pumpkin is a very low calorie food, low in carbohydrates and fat, a good source of fibre, vitamin E and vitamins from the B group, and it is also rich in beta-carotene and vitamin C. Using both means this is a very healthy dish.

To add an extra touch of flavour, add a slice of Montesinos melting cheese when blending the vegetables.
